Role Summary: Le Grand Courlan Spa Resort is seeking a detail-oriented Food & Beverage Controller to monitor and control food and beverage costs, inventory, consumption, and related financial processes. The successful candidate will work closely with Food & Beverage, Kitchen, Purchasing, Stores, and Finance to maintain accurate controls and identify opportunities to reduce wastage and improve profitability.
Key Responsibilities:
- Monitor food and beverage purchases, inventory, transfers, consumption, and wastage.
- Conduct regular stock counts and reconcile physical inventory against system records.
- Review receiving documentation, invoices, requisitions, and stock movements.
- Calculate and monitor food and beverage cost percentages.
- Investigate stock variances, unusual consumption, and discrepancies.
- Monitor portion controls and wastage in collaboration with culinary and F&B management.
- Assist with menu costing and pricing analysis.
- Prepare daily, weekly, and monthly cost-control reports.
- Ensure established inventory and internal-control procedures are followed.
- Work with Purchasing and Stores to maintain appropriate stock levels.
Required Qualifications and Skills:
- Minimum 3 years’ experience in food and beverage cost control, inventory control, accounting, or a related hospitality role.
- Diploma, Degree, or certification in Accounting, Finance, Hospitality Management, Cost Control, or a related field.
Strong numerical and analytical skills. - Knowledge of inventory management, stock reconciliation, food costing, and F&B controls.
- Strong Microsoft Excel skills and familiarity with POS, inventory, or accounting systems.
- High level of accuracy and attention to detail.
